CSA Week 1 Meals

Here's how my meals from Week 1 ended up!

Collard Greens Quiche
This was really yummy!! I added onions, garlic & cheese! 

Mexican Style Stuffed Potatoes with Buttercrunch Lettuce Salad
The potatoes were awesome!! But neither of us were super crazy about the salad. I need to find a different way to use the lettuce.

I ended up just baking the chicken. The caramelized endive ended up very similar to spinach & it was good, but the recipe called for WAY too much butter. If I made it again, I'd use less than half that much butter.

Baked Balsamic Chicken
This was great, but I make this meal all the time so I knew it would be! :)

I didn't end up making the mustard & tarragon chicken.

This is completely gratuitous, just me posting pictures of Isis, but my friend Hannah took some pictures of our family yesterday! She is such a great photographer & she is also going to be watching Isis for me in the fall when I start my student teaching. I feel so blessed to have her as a friend on top of the fact that she takes gorgeous pictures of Isis!! I also realized that I didn't put any of the ones where she is smiling in this post. This is technically a 10 on Tuesday , but the idea is from Mama Kat's Writer's Workshop ! 10 of My Worst Pet Peeves 1. People who don't wash their hands - especially after going to the bathroom. Ewwwww 2. The smell of burps - or just being able to smell a burp. 3. People who interrupt when others are talking. 4. Scratching people with my bare fingernails 5. Gristle in chicken 6. When people sing the harmony part with a song on the radio 7. People who are trying to turn in a non-turn lane - or people who wait until the last second to get in the turn lane 8.
