Last week was my birth stories guest blogger week, so I didn't post several things I normally do. One of those was my CSA share update! So I'm going to try to quickly cover 2 weeks in 1 this week.
Last week, our share box had tomatoes, lemon cucumber, pickling cucumber, slicing cucumber, sweet corn, green beans, green pepper, banana pepper, poblano pepper, lemon basil, spicy globe basil, thai basil, chives, st johns wort, dill & stevia. Unfortunately, last week was also a week where we had a lot going on & we weren't home for as many meals as normal. I did make some mac & cheese with turkey bacon, corn & green beans one night. Isis also ate some cucumber with her meals several days! I made quick pickles & we had a teriyaki chicken & green pepper stir fry!
This week, our share box has tomatoes, lemon cucumbers, pickling cucumbers, slicing cucumbers, sweet corn, green beans, green peppers, banana peppers, swiss chard, sweet basil, sage & oregano! The sweet basil smells absolutely amazing & I want to find a way to make margherita pizza with it!! I also love making black olive & banana pepper pizza with the banana peppers! The sweet corn in these share boxes is the best corn I've ever had. I normally don't like corn on the cob, but I would eat this corn every single day. We've made it by shucking the corn & grilling it on the charcoal grill. We've also stuck it in the oven with the husks still on at 350 degrees for 30 minutes. They were both amazing! We've also tried the green beans a couple of different ways - grilling on the charcoal grill, steaming & boiling. We always put garlic & butter on our green beans. I also want to try a Creamy Chard & Potatoes recipe that is in the newsletter for the CSA share this week!
Right now I'm looking for some tomato recipes!! I know how to do pastas with tomatoes, but I need some more ideas because we have tomatoes coming out our ears! I love tomatoes, so this is not a problem for me, I just need to get creative with recipes! I'm thinking we'll do a pasta & I'm going to try margherita pizza. We've also done turkey bacon, egg & tomato sandwiches.
